| Grilled Summer Veggie Pizza: |

Preheat grill.
Makes 8 Appetizer Servings
1 12-inch BOBOLIĀ® Original Italian Pizza Crust corn oil 2 large tomatoes, sliced 1/2 inch thick 1 large green or red pepper, quartered 1 medium onion, sliced 1/2 tsp. Italian seasoning 2 tbsp. grated Parmesan cheese 1/2 cup (2 oz) shredded Mozzarella or Cheddar cheese 1 15-inch long sheet aluminum foil (optional) |

Brush top of pizza crust lightly with corn oil. Place top side down on grill. Cook until lightly browned, 1 to 2 minutes. Remove from grill.
Brush tomatoes, red pepper and onion with corn oil. Grill vegetables 6" from source of heat, 5 to 7 minutes, turning once, until softened. Arrange vegetables on pizza crust; sprinkle with Italian seasoning and cheeses.
Return pizza to grill. Close lid or cover pizza loosely with foil. Grill until cheese melts, 1 or 2 minutes. Remove to cutting board and cut into wedges. |
