Veggie Summer Pizza
Ingredients
1 12" Boboli® Original Pizza Crust
1/4 c. Roasted Peppers
1/2 c. Mushrooms
1/4 c. Onions
1/4 c. Zucchini
16 oz. Artichoke Hearts
Pinch Crushed Red Pepper
1/4 c. Sun-Dried Tomatoes
2 cloves garlic, minced
1 c. Mozzarella
1/4 c. Tomatoes
1/4 c. Olives
Pinch Basil
1/4 c. Olive oil
Pinch Oregano
Pinch Paprika
Pinch Pepper
1 c. Romano
Directions
Preheat oven to 450° F.
Cook time 12 – 15 minutes
In a large skillet cook roasted peppers, sliced mushrooms, cubed onions, zucchini, summer squash, artichoke hearts, crushed red pepper, sun-dried tomatoes and garlic in hot oil for about 5 minutes or until vegetables are almost tender. Drain. Sprinkle 1 cup of the Mozzarella cheese over crust. Arrange tomato slices in a circular pattern atop cheese. Top with vegetable mixture and halved olives. Sprinkle with remaining Mozzarella cheese and Romano cheese. Add Pepper, Basil and Oregano. Bake about 12 minutes more or until cheese melts and pizza is heated through.
Alternate Methods
For 8" pizza crust, use 2/3 ingredients.
