Lemony Snickety Spinach Pizza
1 12" Boboli® Original Pizza Crust
1 c. Goat cheese
2 cloves garlic, minced
Juice of one lemon
1/4 lb. Fresh Spinach, torn into bite-sized pieces
2 Leeks, white parts only, cleaned & chopped
1tbsp. olive oil
1 c. Parmesan cheese
Preheat oven to 450° F.
Bake time: 8 – 10 minutes
Cream goat cheese, minced garlic and lemon. Spread over large pizza crust. Sauté leeks in olive oil until soft, then add spinach. Sauté for a few seconds and top goat cheese mixture with the spinach/leek mixture. Sprinkle Parmesan cheese over all ingredients and bake for 8 – 10 minutes or until crust is golden brown.
For 8" pizza crust, use 2/3 ingredients.
