Indian Chicken Pizza
1 12" Boboli® Original Pizza Crust
1/3 c. onion, thinly sliced
1 clove garlic, minced
1 tsp. olive oil
1 lb. chicken breasts, skinned, boned, 3/4" pieces
1 c. roasted red pepper, pureed
1/4 c. heavy cream, room temperature
2 tbsp. chicken broth
1/2 tbsp. parsley, fresh, finely chopped
1/2 tsp. cumin, ground
Salt and pepper to taste
1/2 c. Monterey Jack cheese, shredded
Preheat oven to 450° F.
Cook time 8 – 10 minutes
Sauté onion and garlic in oil in skillet until translucent. Add chicken and sauté over medium heat until chicken turns opaque. Add red pepper puree, heavy cream, chicken broth, parsley and cumin. Simmer until liquid is slightly reduced. Salt and pepper to taste. Fill pizza crust with cheese leaving a 1" border. Top with chicken mixture. Bake 8 – 10 minutes on baking sheet in lower 1/3 of oven. Cool slightly and serve.
For 8" pizza crust, use 2/3 ingredients.
