Fried Green Tomato Pizza
Ingredients
1 12" Boboli® Whole Wheat Pizza Crust
1 5-oz. pkg. Boboli® Pizza Sauce
3 large (about 1.5 lbs.) green tomatoes
1 c. buttermilk
1 c. flour
2 tsp. Cajun seasoning
2 c. vegetable oil
1 c. smoked Gouda cheese, shredded
Garnish: basil sprigs, if desired
Directions
Preheat oven to 425° F.
Bake time: 10 minutes
Remove and discard a thin layer from tops and bottoms of tomatoes. Cut into 1/4" slices. Place buttermilk in a shallow bowl. In another shallow bowl, combine flour and Cajun seasoning. Dip tomato slices in buttermilk; then dredge through seasoned flour. Coat both sides thoroughly. Heat oil in large skillet (cast iron, preferred) over medium-high heat. When the oil is hot, panfry tomatoes in batches until golden brown and crispy, about 3 – 4 minutes per side. Drain on paper towels. Blot any excess oil from both sides.
Place pizza crust on ungreased baking sheet. Spread pizza sauce evenly over crust. Arrange fried green tomatoes over sauce and sprinkle cheese evenly over top. Bake in preheated oven 10 minutes or until cheese melts. Remove from oven and let rest 5 minutes. Cut into squares and serve. Garnish with basil sprigs, if desired.
Alternate Methods
For 8" pizza crust, use 2/3 ingredients.
