Coconut Cream Pie
1 12" Boboli® Original Pizza Crust
8 oz. cream cheese, softened
1/3 c. cream of coconut
2 tbsp. confectioners' sugar
1/2 c. sweetened coconut, shredded
1 can (8oz) pineapple chunks, drained and chilled (optional)
1 can (11 oz) Mandarin orange segments, drained and chilled (optional)
1 c. canned cherries, drained and chilled (optional)
Preheat oven to 450° F.
Bake time: 8 – 10 minutes
Mix cream cheese, cream of coconut, and confectioners' s sugar, using a mixer or food processor until smooth. Spread over pizza crust, leaving a 1" border; sprinkle with coconut. Bake for 8 – 10 minutes or until crust is golden. Combine chilled fruit and serve with pie, if desired.
For 8" pizza crust, use 2/3 ingredients.
