Broccoli Rabe Pizza

Ingredients

1 12" Boboli® Thin Pizza Crust
2 c. Broccoli Rabe, 2" pieces
1 clove of garlic, sliced
1 tbsp. olive oil
1/8 tsp. crushed red pepper flakes
salt and pepper to taste
1/2 c. goat cheese, crumbled
1/4 c. Parmesan cheese, grated
1/2 c. sun-dried tomatoes, coarsely chopped

Directions

Preheat oven to 450° F.
Bake time: 8 – 10 minutes

Blanch broccoli rabe in boiling water for 30 seconds; drain, set aside. Sauté garlic in oil until golden; discard. Add broccoli rabe and sauté until tender; toss with red pepper flakes. Add salt and pepper to taste. Fill pizza crust with broccoli rabe leaving a 1" border. Arrange cheeses and sun-dried tomatoes over broccoli rabe. Bake for 8 – 10 minutes or until golden brown or cheese is melted.

Alternate Methods

For 8" pizza crust, use 2/3 ingredients.
