Boboli® Risorgimento
Ingredients
1 12" Boboli® Original Pizza Crust
1/2 c. pesto
Pinch of Crushed Red Pepper
1 c. Asiago
1 c. Gorgonzola
1 c. Parmigiano Reggiano
1 c. Pecorino Romano
1/4 c. Tomatoes
1/4 c. sliced yellow pepper
1/4 c. diced scallions
8 slices fresh buffalo mozzarella
Pinch of garlic
Pinch of pepper
Pinch of salt
Pinch of Italian seasoning
1 tbsp. butter
Directions
Preheat oven to 450° F.
Cook time: 8 – 10 minutes
Sauté yellow peppers, garlic, and scallions in 2 tablespoons of butter. Add salt and pepper to taste. Spread pesto on Boboli® pizza crust leaving a 1" border around edge, add a pinch of crushed red pepper and Italian seasoning. Sprinkle grated Asiago, Reggiano, and Romano cheeses over the pesto. Reserve 1 tablespoon of each grated cheese for final layer of pizza. Layer Buffalo Mozzarella slices and sliced tomatoes over cheeses. Arrange sautéed yellow peppers and scallions over tomato and Mozzarella. Finish by crumbling Gorgonzola over the pizza and sprinkling remaining grated cheeses over other toppings. Bake in oven for 10 – 12 minutes or until golden brown.
Alternate Methods
For 8" pizza crust, use 2/3 ingredients.
