Boston Cream Pizza Pie
1 12" Boboli® Original Pizza Crust
3/4 c. + 3 tbsp. granulated sugar, divided
2 tbsp. all-purpose flour
3/4 c. milk
3 large egg yolks
2 tsp. vanilla, divided
2 tbsp. butter, melted
3 tbsp. light corn syrup
2 tbsp. water
4 – 1 oz. squares of semisweet chocolate, chopped.
2 tbsp. butter or margarine, melted
Preheat oven to 450° F.
Bake time: 6 – 8 minutes
In a small saucepan over low heat, whisk together 1/4 cup sugar and flour. Slowly whisk in milk and egg yolks. Raise temperature to medium and bring to a boil. Boil for 1 – 2 minutes or until thickened, stirring constantly. Strain into bowl and mix in 1 teaspoon vanilla. Cover custard directly with plastic wrap and chill 30 minutes or until cool.
Brush butter/margarine all over pizza crust then sprinkle 3 tablespoons sugar on top. Bake for 6 – 8 minutes or until golden brown. Set aside to cool slightly. Spread custard over pizza leaving 1" border around crust.
In small saucepan over medium heat, add 1/2 cup granulated sugar, corn syrup, and water. Whisk until smooth and sugar has dissolved. Remove from heat and stir in chocolate and 1 teaspoon vanilla until smooth. Cool slightly then drizzle over pizza.
For 8" pizza crust, use 2/3 ingredients.
