BBQ Jerk Chicken Pizza
1 12" Boboli® Original Pizza Crust
1 tsp. extra-virgin olive oil
1 chicken breast, grilled
2 green onions, grilled and sliced 1” long
1/2 c. canned whole kernel corn, drained
1/2 c. canned black beans, drained and rinsed
1/4 c. pineapple tidbits, drained
Salt and pepper to taste
3/4 c. bottled Jamaican Jerk sauce
1/2 c. Mozzarella and Provolone mix
1/2 c. Cheddar cheese, grated
1 tbsp. Parmesan, grated
Preheat grill for 10-15 minutes.
Grill time 12 - 14 minutes.
Preheat grill for 10-15 minutes. Brush a dash of olive oil on each side of the crust. Grill crust 2-4 minutes on each side. Remove from grill. In a bowl, mix grilled chicken, grilled green onions, corn, beans, and pineapple tidbits. Salt and pepper to taste. Spread Jamaican Jerk sauce on pizza. Add cheese. Top with chicken vegetable mixture, and Parmesan. Place pizza back on grill to warm for 8 – 10 minutes or until cheese is melted. Slice and serve.
For 8" pizza crust, use 2/3 ingredients.
Preheat grill for 10 – 15 minutes on medium-high heat. Please follow any safety instructions provided by your grill manufacturer prior to grilling. If you have a gas grill, turn off one of the burners. If you use charcoal, push charcoal to one side. Brush a dash of olive oil (or melted butter) on each side of your Boboli® pizza crust. Place the crust on the side of the grill with the burner turned off or without the charcoal. Grill the crust 2 – 4 minutes per side. Remove from grill. Add toppings, including any pre-cooked meats and vegetables and return to grill for 8 – 10 minutes. Grill until the cheese is melted (if applicable) and the crust is golden. Remove from heat, let cool for 2 minutes, and enjoy!
